Sweet and sour pork in your Pearl cocotte

We travel to asian flavors to share with you an exquisite recipe of sweet and sour pork that we will elaborate in our cocotte Pearl.

Chinese cuisine is based on tradition and, today, we suggest you cook it over low heat and, thus, give prominence to all its flavors.

For this preparation you will need:


  1. Clean the pork tenderloin well and cut into cubes.

  2. Prepare the batter for the pork tenderloin in a bowl, to do this, beat an egg yolk with cornstarch, salt and milk.

  3. Add the sirloin cubes to the batter and leave to rest.

  4. Start preparing the vegetables for the sauce by chopping the peppers and onion.

  5. Peel and grate the ginger.

  6. Make a mixture in a bowl with the soy sauce, brown sugar, balsamic vinegar and tomato paste.

  7. put our casserole to heat with a little sunflower oil and start cooking the onion.

  8. Then add the bell pepper and, optionally, a few florets of broccoli.

  9. When these begin to soften, add the ginger and let these elements cook for approximately 1 or 2 minutes.

  10. Add the soy mixture that we had reserved in a bowl.

  11. Next, the chopped pineapple with all its juice and the chicken broth.

  12. Dissolve a tablespoon of cornstarch in a little cold water and add it to the sauce.

  13. Let the sauce cook in our cocotte Pearl with the lid half open thanks to its system Helix Dripless Lid.

  14. Meanwhile, start frying the sirloin.

  15. When it is ready, add the meat to the sauce together with the cashews (the latter is optional) and let it cook over low heat with the lid open for a few minutes, between 5 or 7 minutes.

And ready! We will have a delicious dish that will make our palate travel.
